Makes about 12 medium sized scones

Butter 125g
Cake flour 3 cups
Baking Powder 4 tsp
Salt just a pinch
Sugar 1 tbsp.
Eggs 3
Milk ½ cup
Chocolate Chips 1 cup
Sift all the dry ingredients into a large mixing bowl.
Crumb the butter with the sifted dry ingredients.
Combine the milk and 2 eggs and mix well. Add to the dry ingredients with the chocolate chips.
Mix well but do not knead the dough, be very careful not to over mix.
Dust your work service with flour and lightly roll out the dough to about 2.5cm thick.
Use a 5cm round cookie cutter and cut out your scones. Gently re-work the remainder of the dough and continue to cut out scones until all the dough is finished.
Mix 1 egg with 1 tbsp. cold water.
Using a pastry brush, brush the tops of the scones with the egg wash.
Back in a pre-heated oven @ 230 °C for 10 Minutes.
Cool on a wire rack and enjoy soon.
